Cinnamon and Mixed Fruit Muffins


Such a simple recipe, a great recipe to bake for Christmas or just a little treat for yourself! Cinnamon and Mixed Fruit is the perfect taste for Christmas, so I hope you enjoy!

What You Need | Ingredients 
2 cups - Self Raising Flour
Tablespoon - Cinnamon
3/4 cup - Dark Brown Sugar
1 egg
Mixed Fruit (add as much as you would like)
3/4 cup - Milk
1/2 cup - Vegetable Oil
2 teaspoons - Sugar

How To Do | Method
Turn the oven on to 200c, grease a muffin tray. I used silicone muffin cases, all you have to do is wash them up after! They also make the best shaped muffins!
Sieve flour & sugar into a mixing bowl, make sure the mixing bowl is quite large.
Break the egg into a small bowl and beat until it's one color. Add the beaten egg, fruit, milk & oil to the flour mixture and stir until mixed together.. do not overmix!
Spoon the mixture into your muffin cases or muffin tray. Bake the muffins for 25 minutes. When you take them out of the oven, you can sift icing sugar over the top, or you could make cinnamon sugar.
